When did you know you wanted to become a pastry chef?

All of my spare time went into reading about pastry and watching videos so I thought hey why not do this for a living.

What advice would you give someone who wants to become a pastry chef?

Never stop learning, always ask questions and remember every answer you get so you never have to ask it again.

What is your favourite thing to make at Willow Cakes and Pastries and why?

Croissants!! It’s a long drawn out process with high rewards – flakey, buttery croissant. Also, rolling croissants is very therapeutic.

What is your favourite thing to eat at Willow Cakes and Pastries?

Croissants.

Hilary McLeanHow long have you been working at Willow Cakes and Pastries?

1 year (as of March 2016).

When did you know you wanted to become a pastry chef?

About a year after graduating university I realized that I wanted to do something different, something more creative. I had always enjoyed baking at home and so I decided to go back to school and found that this is what I want to do with my life.

What advice would you give someone who wants to become a pastry chef?

I would tell anyone wanting to become a pastry chef that practise is the key to success. Bake everyday, try new things and keep moving forward.

What is your favourite thing to make at Willow Cakes and Pastries?

I really enjoyed making the croquembouche at Christmas time. It’s a classic dessert that looks so elegant and is fun to make.

What is your favourite thing to eat at Willow Cakes and Pastries?

That is a very tough question! For me it’s a tie between the carrot cake and lemon squares.
